Our Schlemmertopf clay pot has yet to disappoint! Tonight we were in agreement: “Another winner!” We picked up some beef ribs last weekend, experimented with a new recipe and loved every bite. If you don’t have a Schlemmertopf yet, what are you waiting for? It seems to be a fool-proof and nearly effortless way to cook. Hope you enjoy this recipe as much as we did.
1 McCormick seasoning packet: Slow cooker BBQ pulled pork
1/3 C honey
1 T lemon juice
½ tsp. ground black pepper
1 tsp. Amino Acid (or soy sauce)
1/8 C brown sugar
Pre-soak clay pot lid in water for 10 minutes. Place ribs, onions and carrots in pot. Pour honey mixture over meat and vegetables. Cover pot and place in cold oven. Set temperature to 480 degrees. Cook for 70 minutes.
The Schlemmertopf provides a nice quantity of barbeque-flavored juice. We served the dish alongside broccolini (5 minutes in boiling water and then lightly sautéed in olive oil, garlic and pepper flakes) and coleslaw (light dressing with raisins, apples and toasted almonds). Turned out to be a perfect combination.
Oh, and then there was Good Earth carrot cake and date bars to top off an already yummy meal! Ok, so we splurged a little tonight!
